From food waste to compost overnight! We are the proud owners of a CLOSED LOOP organic food composter which uses natural microbes and heat to transform food waste into nutrient rich compost in just 24 hours.
Roughly 260kg of food waste goes through the machine per week, producing a highly concentrated compost that is mixed with soil and used in our onsite kitchen gardens. This also heavily reduces our methane emissions.
This is one of the many sustainable practices we have introduced to help reduce the environmental impact in our community.
A few years back, we were very proud when we were honoured with the Good Living Sustainability Award at the Sydney Morning Herald Good Food Guide Awards.
Then, the award was the culmination of years work, with the team building up the kitchen gardens into more than 500 square metres of land now cultivated for food. Since then, each year we have focused on building our sustainability processes and lowering our carbon footprint for the greater good of our environment.
In addition to the onsite kitchen gardens, we have approximately 40 chickens that keep the kitchen well supplied with fresh eggs. We are dedicated to growing our own produce and sourcing as much local produce as we can, to ensure quality and seasonality are achieved. More than 15% of the restaurant menu comes directly from our garden.
Everyday Sustainability
Here are some further examples of how year-on-year we have actively achieved a more sustainable hotel;
In the kitchen, the seasonal menu offerings are designed using large amounts of house-made, home-grown, organic and local produce from local suppliers. The estate houses two lush vegetable gardens, which are harvested daily, forming the basis of much of the menu. Chefs are continuously planting new, seasonal seedlings and hand picking produce to use that very day
We don't buy endangered species of seafood such as large tuna and swordfish and we adopt the “nose to tail’ principle whereby wastage of produce is minimized
The property uses rainwater from a tank, for the garden
The few kitchen chemicals that we use are fully biodegradable
We have our own small orchard, including olive trees and quince trees and we even use our rose petals in our homemade sorbet
We stock chemical and preservative free wine and purchase from a number of international and local organic and bio-dynamic wine suppliers
Our coffee is sourced from a local company less than 30km away
Our tea comes from a local company less than 10km away
Our toilet paper is made from bamboo and is delivered plastic free
We have a Testler car charger onsite
We have invested in Solar panels for the main house to reduce energy consumption across the property
Our signature Olive Oil is produced in Mudgee and bottled onsite
We recycle our paper office waste and all cardboard packaging
We chose to partner with local NSW company, iKOU, in the day spa as their products offer clean beauty. They are not tested on animals, are organic where possible, vegan friendly, palm oil free and are socially responsible.

We generously donate to local organisations and give back, both financially and socially, to our community.
We are actively involved with World Vision Australia by sponsoring three children every month. We have sponsored three children continuously since 2008 and will continue to offer our support to children in need.
We also proudly support YALARI who are educating and empowering Indigenous children every day.
After the devastating 2019 NSW bushfires, we raised money via our loyal customer database, for our local Killcare Wagstaffe Rural Fire Service by donating 25% of all Gift Voucher sales on Christmas Day and Boxing Day (two big days!). We then followed this up with an appeal collecting money for our local Walkabout Wildlife Park at Calga, which was at the time, a safe haven and rehabilitation sanctuary for injured native wildlife. We've held many online raffles and other fundraising activities to assist the NSW community in flood & disaster relief.
Our major sponsorship partner remains the Bouddi Foundation for the Arts. A wonderful local organisation supporting young and upcoming artists and musicians from the Central Coast.

In 2006 the main manor house and 3 cottages sat amongst the stunning acreage of young gardens & presented a wonderful opportunity for development. Karina and Brian Barry, were invited by Coast & Country Properties to manage this existing B&B and assess its full potential by coming up with ideas to enhance the existing property. They moved to Killcare and fell in love with the stunning natural beauty of the Bouddi National Park and local waterways.
Inspired by the beauty and potential of the existing property, they created a vision & a plan to develop the B&B into a luxury world-class retreat. To achieve this goal, in 2007 they leased the property and worked with Coast & Country Properties to renovate and develop the property, in a way that would be sympathetic to the natural beauty of the area and to complement the existing cottages. In 2008, Manfredi Enterprises were invited to come on board to assist with a new restaurant vision and redesign of the entire guest dining experience.
The property gained strong media interest and industry accolades and edged its way into the hearts and minds of the local community, and also Sydneysiders looking for a quick & easy luxury getaway that had great food and that felt like they were far away from the hustle of the city.
The retreat has become one of the most recognisable and distinctive boutique hotels in Australia, with a fabulous reputation both in the industry and with guests.
2017 marked the 10th anniversary of Bells at Killcare with celebrations enjoyed throughout the year. 4 luxurious lodges were built in 2023 and opened for guests to enjoy in February 2024.
The most special day of our lives
My husband and I recently had our wedding at Bells at Killcare, and it was nothing short of phenomenal. We stayed on-site for two nights, and every aspect of our experience exceeded our expectations.
From the moment we arrived, the service and attention to detail were absolutely top-tier. A special mention goes to Katrin, the wedding coordinator, who was calm, level-headed, and by our side every step of the way. She ensured everything ran seamlessly, allowing us to truly enjoy the day we had been dreaming of.
The staff were exceptional, not only were they attentive with food and drinks throughout the event, but they even cheered us on during our first dance, which we had spent months rehearsing. Those little touches meant so much!
The accommodation was beautiful, stylish, comfortable, and perfectly suited for all our family and friends to stay together on-site. The gardens were stunning, providing a magical backdrop for our ceremony and a relaxed space for guests to enjoy lawn games during the afternoon.
There were also so many breathtaking spots for photos throughout the property, it felt like every corner held a new opportunity for a perfect shot.
If you are considering Bells at Killcare for your wedding, I truly cannot recommend it highly enough. It was everything we hoped for and more, an unforgettable setting for the most special day of our lives.

WOW, Bouddi Trek
We loved the Bouddi Trek! Bells was fantastic. Loved the balance of meals, wine and luxury touches. The accommodation was outstanding.
Nicola, our guide, was a highlight. Such lovely company and really caring for all. The trek itself was well thought out. Enough of a challenge but very enjoyable! And of course, the gin bar at the end was a lovely surprise!
We definitely recommend the trek and Bells, to all.

Bells Day Spa
I've had the best, most relaxing massages here, which I would 100% recommend. I had a couple's massage with my husband, which was very relaxing and quite spiritual. And then a single massage another time, which was very nice too. The staff are very friendly and professional. Excellent customer service 🙌🏼 Always enjoy the great vibes and deep, relaxing experience 😌 Definitely will be back for more!!
Thank you spa team 🙏🏼
